I had limited time to prepare dinner tonight so I made the soup a few days ago and stored it in the fridge so tonight all I had to do was warm up the soup and make the sandwiches. Pretty quick and easy!
Substitutions/Additions for Butternut Squash Soup with Apple Grilled Cheese Sandwiches:
- didn’t have fresh ginger so I used about 1 tsp of ground ginger
- only used 1/8 tsp of cayenne pepper
- Aldi didn’t have butternut squash this week so I used two bags of frozen squash we used instead
- we ate the sandwiches on sourdough bread
- I had leftover Gruyere and Jarlsberg cheeses in the fridge so I used those with a little cheddar instead of the smoked gouda
Tips for Butternut Squash Soup with Apple Grilled Cheese Sandwiches:
- soup can be made ahead of time
- Instead of putting oil in the pan or buttering bread to make the grilled cheese sandwich, try using mayo instead. I’ve done this for years…saw it on a cooking show and have never went back. Perfect, crisp crunch everytime. Give it a try and let me know what you think 🙂
