I was off work today so added a recipe for some Chicken Enchiladas that I thought may take a bit more time. I ended up making it earlier in the day, covered in and placed it in the fridge, then had Xander put it in the oven so it was ready when we returned home from practice. Worked well and honestly, the prep wasn’t that long. It’s a pretty easy recipe and WOW was it delicious! I took one bite and had to stop to savor the flavor. It was so yummy!
Substitutions/Additions for Chicken Enchiladas:
used regular mild salsa from Aldi…nothing fancy
I didn’t have any Mexican cheese so I sprinkled on a little mozzarella and a little cheddar
instead of serving with sour cream, we use “cream” at our house which is just plain greek yogurt
