Substitutions/Additions when making Chickpea Soup:
- decreased olive oil from 2 to 1 tablespoon
- used 8 oz of spinach instead of 5 oz
- I didn’t have any fresh thyme so I just sprinkled the dish with dried thyme when plated

- serve as a soup or a sauce (it’s a little on the thin side)
