My kids aren’t crazy about kale but said that it actually tasted really good in this recipe. I’m the complete opposite…I will steam a big bag of kale for the week and eat it as a snack or side with dinner. If I don’t have anything else handy, a plate of steamed kale with an over easy egg on top is a go to meal for me. Yum!
Substitutions/Additions for Pot Pie:
- used one tablespoon of oil instead of two
- doubled the amount of carrots and celery
- used a 12oz bag of chopped kale
- didn’t have any fresh chives so I used about 1 tablespoon of dried chives
