Although I used nearly all of the ingredients in this recipe, my version of this soup was a lot thicker and more veggie packed than the recipe as written. If you prefer a more brothy soup, follow the recipe more closely than I did.
I love to find a good base recipe and tweak it to fit my taste. I know exactly what is going into the soup as well which makes me feel much better about serving it to my kiddos.
Substitutions/Additions for Olive Garden Minestrone Soup:
- only used 1 tablespoon of oil instead of 2
- roughly doubled the onions, celery, carrots, and zucchini
- added in the whole can of tomato paste instead of 1/4 cup
- added an entire 10oz bag of frozen beans
- Instead of 2 cups of spinach, I added two overflowing handfuls…I LOVE spinach
- didn’t have any parsley so I omitted it from the recipe
Tips for making Olive Garden Minestrone Soup:
- Personally, I don’t think there’s ever too many veggies. Dump away on this soup! If you don’t have a use for the remaining frozen beans, add the whole bag 🙂
