This recipe has you blanch the cauliflower. I chose to steam the cauliflower instead. I have an electric veggie steamer that I could have used but instead I chose to steam in the microwave using my Epicure Multipurpose Steamer to make the process a bit quicker tonight. Either way works well 🙂
Substitutions/Additions made by Cooking After Class for Cauliflower Taco Bake:
- used venison instead of ground beef
- eliminated oil
- used 1/3 heavy cream and 1/3 skim milk
- 1 tbsp butter instead of 2
Tips from Cooking After Class for making Cauliflower Taco Bake:
- Can make it ahead, refrigerate, then bake later
- steam the cauliflower instead of blanch in boiling water to preserve more nutrients
