This dish is sooo good but sooo not healthy. We all deserve a splurge every once in a while. Tonight was my night! Each time I make this dish, I contemplate changing a few things to make it a bit healthier but it’s so good the way it is that I just can’t bring myself to make any additional changes. I just savor every single bite…it’s seriously that good 😋
Substitutions/Additions for Shrimp and Grits:
- decreased better to 2 tablespoons
- used 5 minute quick grits because it’s what I had in the pantry
- substituted green onions for scallions
Tips for making Shrimp and Grits:
- if you’re short on time, use quick 5 minute grits instead of stone-ground grits (cuts the cook time down considerably…I had dinner ready to serve in less than 30 minutes)
- serve immediately as the recipe indicates…the grits thicken as they stand and are best served right away nice and warm
- don’t skip the bacon grease…I was so tempted to drain the pan before adding the shrimp but cooking the shrimp in the bacon grease makes the dish
