With the exception of the added biscuits, this is a fairly healthy meal. Funny enough, the reason I added this recipe to our menu was because of the biscuits. I had a can left in the fridge that was expiring next week. I needed a use for it so…we decided to give this recipe a try.
Getting this recipe prepared was pretty easy. It does take 50 minutes to cook so be sure you plan to make it on a day where you have a little extra time to wait before dinner will be ready to be served. I did put this casserole together earlier in the day, covered it and left it in the fridge until later in the evening when I was ready to bake it. Worked well for my schedule and it didn’t appear to have altered the taste or bake time of the casserole. This flexibility is nice when you’ve got a hectic schedule 🙂
Substitutions/Additions for Taco Bubble Up Casserole:
- used ground venison instead of beef
- used the bigger sized can (16 oz) of biscuits because it’s what I had in the fridge
- used a combination of shredded mozzarella and sharp cheddar cheese
- substituted plain greek yogurt for sour cream for the topping
Tips for making Taco Bubble Up Casserole:
- if using the larger sized biscuits, cut each biscuit into 8 pieces instead of 6
