I’ve been making these Turkey Mini Loaves since my kids were little. They’ve always enjoyed them…especially the cheese on the inside. I personally love swiss cheese so I tend to use that but I’ve made it with mozzarella too and they are delicious as well.
For a lighter meal, serve the turkey loaves with some steamed veggies. If you’re more of a meat and potato family, it pairs well with just about any potato (mashed, baked, scalloped…haven’t tried it with sweet but I’m sure it would be tasty 🙂)
You’ll notice that the recipe calls for one pound of ground turkey. I bought my turkey at Costco so the packages are larger than a pound. If I’m not making something else within a few days where I need the extra turkey, I just cut an extra slice of cheese and make 5 loaves instead of 4. I didn’t change anything else in the recipe. I know the leftovers will be eaten at my house so having an extra loaf is not a big deal at all. My growing children eat a ton!
Turkey Mini Loaves
Ingredients
1 egg
1/4 cup Italian Breadcrumbs (if regular breadcrumbs, add 1/4 tsp Italian seasoning)
2 Tablespoons milk
1 Tablespoon dried chopped onions
2 teaspoons dried parsley flakes
1/4 teaspoon salt
dash pepper
1 pound ground turkey
1 1/2 ounce block of swiss or mozzarella cheese
1/4 cup barbecue sauce
Directions
- Preheat oven to 350 degrees. Crack the egg into a mixing bowl. With a fork, beat the egg until the yolk and white are combined. Add the breadcrumbs, milk, dried onion, parsely, salt, and pepper. Stir with a fork to mix well.
- Use your hands or a wood spoon to break up the ground turkey as you mix it into the mixture in the bowl.
- Cut the cheese into four long pieces. Divide the turkey mixture into four equal parts. Mold each portion around a cheese stick. Shape each into a small loaf. Put the loaves in a baking pan.
- Bake for 25 minutes. Spoon barbecue sauce over each loaf. Put back in the oven. Bake for 5 more minutes.
