Mushroom and Spinach Pasta


I wasn’t so sure how the kids would like this Mushroom and Spinach Pasta but I was pleasantly surprised when they devoured the entire skillet. They typically are not huge fans of balsamic vinegar but apparently they didn’t mind it in this recipe.

Substitutions/Additions made by Cooking After Class for Mushroom and Spinach Pasta:

  • didn’t use fettuccine or linguine, I used pasta that I had leftover in my pantry
  • used 1 tablespoon of oil each time it was called for in the recipe instead of 2 tablespoons
  • didn’t use any fresh basil but will if I make this again in the summer when I have some available
  • used white mushrooms instead of cremini

Tips from Cooking After Class for making Mushroom and Spinach Pasta:

  • double the mushrooms and spinach, I LOVE veggies and this could definitely use more
  • don’t leave out the pistachios…they were amazing with this pasta
