I was drawn to the recipe because it was fairly healthy and the ingredient list was incredibly short. Besides oil, salt, and pepper, there are ONLY 3 INGREDIENTS!
I don't shy away from beans when cooking but this recipe just didn't come together quite as expected in the flavor department. It wasn't bad, but I wasn't left wanting more either.
Substitutions/Additions made by Cooking After Class for White Bean and Pesto Risotto:
- used all of the listed ingredients but I roasted the beans in the air fryer instead...400 degrees for 10 minute...shake halfway through
Tips from Cooking After Class for making White Bean and Pesto Risotto:
- For the pesto, I used frozen cubes of prepared pesto from Costco. I love Costco’s pesto but it comes in such large containers that there is no way we can use it all before it expires. So…before it expires, I freeze it using silicone molds. These cubes are about 2 tablespoons each so for 1/3 cup, I took out two cubes to thaw.
