In our house, we all love a good baked potato! As a way to mix it up a bit, we tried this Italian Zucchini Topped Baked Potato. It was quite tasty!
This will be a recipe I continue to return to throughout the summer. It's easy to make, very filling, and a great way to use some of the zucchini in our garden.
- followed recipe as written (note the amounts are for 1 potato so if you're making for your family, adjust accordingly)
Tips from Cooking After Class for making Italian Zucchini Topped Baked Potato:
- We prefer baked potatoes made in the air fryer even though it takes a bit longer...400 degrees for 40 minutes (spray with olive oil and sprinkle with sea salt and garlic powder)
